What makes a great breakfast roll? In the latest episode of Behind GEC, Chef Russell Watt takes us behind the scenes, where he shares the thinking behind one of our most popular breakfast dishes and provides a glimpse at how it's brought to life in the kitchen.

The Orangery Breakfast Roll brings together a Cumberland pork sausage, Red Leicester cheese, crispy bacon, a fried egg, house-made tomato chutney and fresh sage grown on site. It's a simple dish but one that highlights how thoughtful ingredients and careful preparation can transform a familiar favourite.

As Russell puts it, it's all about using "a little bit of this and a little bit of that" to create a whole lot of flavour.

Built layer by layer

The roll starts with a layer of house-made tomato chutney. Made with shallots and a touch of chilli, that brings sweetness, depth and a gentle warmth that balances the richness of everything to come.

A handful of fresh rocket adds peppery freshness and a little contrast against the savoury elements. Next comes the Cumberland pork sausage, the hearty foundation of the dish. Red Leicester cheese is layered on top, adding a creamy texture and subtle nutty flavour that complements the sausage perfectly.

Chef Russell then adds crispy bacon and a freshly fried egg, creating the satisfying combination that makes this such a popular way to start the day.

The ingredient that makes the difference

While the sausage, bacon and egg provide the familiar comfort of a classic breakfast roll, it's the fresh sage that sets ours apart. Grown on our on-site farm beneath The Orangery, this fragrant herb adds a subtle earthy flavour that elevates the dish, showcasing how thoughtfully sourced ingredients can make all the difference. 

It's harvested from London's largest on-site hydroponic farm, located beneath The Orangery. The farm grows over 35,000 plants using up to 90% less water than traditional farming, and last year it earned The Orangery the Innovation Award at the Foodservice Cateys 2025. Grown just metres from the kitchen and picked shortly before service, the sage offers exceptional freshness while supporting our commitment to reducing food miles and bringing guests closer to the origins of their food.

It's a small ingredient with a real impact, both on the flavour and on the story behind the dish.
